許多研究指出發酵黑蒜具有抗癌、抗肥胖、護肝及抗發炎等特性。然而,目前對於這些具有生物活性的成分或化合物的資訊仍不清楚。因此,本研究的目的為探討五種不同極性的溶劑黑蒜萃取物對於四氯化碳誘導的急性肝損傷護肝作用。實驗結果顯示,黑蒜對於四氯化碳所誘導的急性肝損傷具有顯著的改善作用,不僅提高了抗氧化活性,更降低了發炎反應,為臨床應用提供了藥理學的依據。

Many studies have pointed out that fermented black garlic has anti-cancer, anti-obesity, hepatoprotective and anti-inflammatory properties. However, current information on these biologically active ingredients or compounds remains unclear. Therefore, the purpose of this study was to investigate the protective effects of five different polar solvent black garlic extracts on carbon tetrachloride-induced liver injury. The results showed that black garlic had a significant improvement effect on acute liver injury induced by carbon tetrachloride, which not only improved the antioxidant activity, but also reduced the inflammatory response, providing a pharmacological basis for clinical application.
